I was inspired to make this when I was on a layover in Denver returning from the east coast. Jim and I had 8 hours to kill, so we decided to have lunch at a cute bistro. After lunch, Jim wanted a cup of Starbuck’s coffee. He loves Starbuck’s so much, I’m surprised when he gets a cut that he doesn’t bleed coffee. Yes, it’s that bad. He actually has been to more than a hundred Starbuck’s across the country!
Anyway, while we were there, I decided to have this yummy chocolate square. It had a shortbread cookie crust, a brownie, and pretzel middle topped off with caramel. When I got back to California, I just had to have that treat again. Unfortunately, after a very short time, Starbuck’s stopped carrying it. I asked a manager, who agreed with me that it was one of the best treats they ever had, what happened to it? She said it was gone for good. So, I took the components of that Starbuck’s sweet and topped my bark with the shortbread cookies, pretzels and caramel drizzle. Again, my taste tester said it got a thumbs up!!!
2 cups semi-sweet chocolate chips
1 14 oz. bag caramels
2 T water
2 cups chopped store bought shortbread cookies
1 cup chopped pretzel sticks
Melt the chocolate in a microwave, stirring in 30 second intervals until smooth. Pour onto a parchment paper lined baking sheet. Spread chocolate to a 1/8 inch layer. Place in refrigerator and allow to harden.
In the meantime cook caramels and water in a saucepan over medium-low heat until completely melted, stirring constantly. Spread over bark.
Sprinkle cookie chunks and pretzels over bark, pressing into place. Refrigerate until chocolate is completely hardened. Cut into triangles.
